The Black rice is a brown and aromatic rice with an unmistakable black color: despite its exotic appearance, it is an Italian rice made in Vercelli; its characteristic color is due to the presence of anthocyanins which are strong antioxidants and the rounded grain makes it ideal for various preparations with the possibility of giving free rein to the imagination of colors without neglectinga supply of nutrients. The black rice contains a higher quantity of mineral salts such as selenium, manganese, zinc and iron than white rice and is gluten-free. An original use in the kitchen is to use it as flour, obtained with a normal coffee grinder, to prepare tagliatelle, gnocchi, ravioli and desserts.
