The tuna ventresca is the softest and tastiest part obtained from the most valuable part of the animal, the one that wraps the abdominal cavity. The red tuna is processed according to ancient Sardinian recipes and left to rest for 3 months after packaging so that when you open the package you can enjoy the unique flavor and tender texture of red tuna!
