Compote of Madernassa Pears. Madernassa Pear is a typical variety of Piedmont. The small fruits have a thin, smooth and very hard skin; the pulp is clear, crunchy, slightly grainy and very fragrant. Excellent for cooking, it is a typical ingredient of ancient traditional recipes of Langhe and Roero. Perfect in combination with cheeses, to be tried on toasted bread with a little butter.
