Pantelleria pesto or Ammogghiu is a traditional recipe from the island of Pantelleria. Simple and genuine, Ammogghiu Pantesco is a summer pesto with a Mediterranean flavour. Few ingredients and all the flavor of tomatoes ripened in the island's sun. Use it to season pasta (spaghetti and other formats), to flavor roasted or grilled meats or fish. Excellent as a condiment for bruschetta. Ammogghiu can be used cold or slightly heated.
