Bottarga is defined as "the caviar of the Mediterranean", it is an ancient product that is obtained from dried, salted and seasoned fish eggs. To obtain it, a long and tiring process is required which starts with the extraction of the fish eggs, their thorough cleaning and subsequent salting. The last step after pressing is aging for at least 90 days, an indispensable period of time to give the bottarga the intense flavor that characterizes it.

Pairing and preparation: the most common way to use it is to grate it directly on the plates. Try it on croutons with extra virgin olive oil or on pasta, eaten alone cut into thin slices and seasoned with extra virgin olive oil or combined with artichokes and celery.

Storage: store in a cool and dry place. After opening store in a refrigerator.
